Sunday Best

Amazing Slow Cooker Beef Roast
adapted from All Recipes

Ingredients
1 (10.75 ounce) can condensed cream of mushroom soup
1 (1 ounce) package dry onion soup mix
3/4 cup water
2-3 pounds pot roast
Salt & Pepper
Granulated Garlic

Directions
Rub beef roast with salt & pepper and garlic
Put about 2 tbs of oil in a frying pan and brown all sides of beef roast

Add cream of mushroom soup, dry onion soup mix, and water to crock pot and whisk together
Put beef roast in crock pot and cover with mixture

Cook on low for 8-9 hours or high for 3-4 hours
I usually put it in Saturday night on low and on Sunday after Church its ready and perfect.

Orange Honey Glazed Carrots
adapted from All Recipes

Ingredients
1 pound baby carrots
1/4 cup orange juice
3 tbs brown sugar
2 tbs butter
1 tbs of honey
1 tsp of corn starch
1 pinch salt

Directions
Boil carrots in water until tender and drain put in your serving bowl.
In same pan whisk together orange juice, brown sugar, butter, honey, corn starch, and salt.
Bring to a boil and let simmer for 5 minutes so juices can thicken.
Pour orange mixture over bowl.

I love these recipes. It is probably one of my favorite meals. It is a perfect Sunday roast. Of course you make it with some mahsed potatoes. The gravy from the crock pot beef roast is perfect to pour over your mashed potatoes. Enjoy.

I really think they should make a song with those as the lyrics.
What two colors are cuter black & pink?
The answer is there isn't ;)
Lets break down why I heart this frame so much:
1. Do it in any number of colors and it works for any holiday
2. I can put this frame in our future daughter's black & pink room
3. I heart Valentine's Day decor
4. I also heart rolled flowers

Start with making 3 rolled flowers with satin material.
I used the satin liner.
$3.99 a yard at Hobby Lobby. I bough 1/4 a yard but only used half of that.

I bought an unfinished 5X7 wood frame from Hobby Lobby;
spray painted it black and then distressed it.

Cut pink paper at 5X7
pink paper by my minds eye
Took a ribbon and put it across the paper and just used tape to hold it on the back.
My ribbon was black satin with a ruffled edge.
Hot Glued the rolled flowers right on top of the ribbon.
Put it inside the frame
Hung it on the wall and thought about how cute it would be in a little gals room.
Or of course in addition to the "House of Pink"!

Oreo Truffle Pops

Since we have already acknowledge I am pretty much obsessed with Valentine's Day here is another sweet to add to it

1 pkg Oreo's Crushed
I just used the Target store brand
Yes the whole pkg crushed (including the frosting)
1 pkg Cream Cheese
1 pkg Chocolate Flavored Almond Bark
Lollipop Sticks

Get everything you need ready
Cookie sheet with foil
Crushed Oreo's
Room temperature Cream Cheese
or just pop it in the microwave for 30 seconds at a time until smooth, mixing in-between.

Mix together cream cheese and crushed Oreo's

Take around 3 tablespoons of the oreo cream cheese mixture
pat around a lollipop stick until it is a circle
Do this until you have no more oreo cream cheese mixture left
setting each one on the cookie sheet covered in foil
Put into the freezer

Melt half of the chocolate bark on your stove top
Stir when needed
Make sure and watch it closely
The chocolate burns easily
Don't put temp higher than medium high

Take the oreo lollipops out of the freezer
Dip in the chocolate bark
Twirl a couple times
Set back down on cookie sheet
Continue until you run low on chocolate bark
Then melt other half of the bark
Finish until all the lollipops are covered in chocolate bark
Set in the Freezer until the bark is completely hardened around the oreo mixture

Your done!

I felt like mine needed a little something extra since I am bringing them to a Valentines Party
So I went ahead and tied a brown and pink ribbon into a knot around each lollipop

Now you're really are finished
P.S. Try not to eat them all until you get them to the party ;)

Hostess Gift

Saturday we will be attending a Valentine's Party. I really wanted to bring the hostess a "hostess gift." So for the last week I have been racking my brain on what the heck to bring! What do you bring for hostess gifts? I usually don't give hostess gifts. I always bring a treat or a side to help with the party but not a specific little something for the host. At last, I googled! So if anyone comes across the predicament I have been in you can just click on this post!

So here is what has been going through my head:
1. I love my Conversation Tree but don't think it totally goes for a hostess gift.
2. My sewing machine is currently out of use. Can't do anything that involves sewing or I would totally be making the scalloped half apron.
3. For the Christmas party I brought a rolled flower wreath for the dirty Santa Gift Exchange.
4. I want to do something NEW.

So what the heck am I going to do?

Yet another Valentines Day round up

yes hubs is excited for Valentines Day to come and be gone
you can blame it on me if you turn your casa into a house of pink as well

I made me a cupcake liner pom pom. Isn't it darling?

Materials:
sewing pins
cupcake liners
hot glue
Styrofoam ball
candle stick holder

Take 2 cupcake liners and push a pin through the middle
scrunch the liners up
hot glue the bottom
put on Styrofoam ball
open liners back up and make sure the pin is all the way pushed in into the ball
cover the ball
I didn't cover the bottom of my ball and instead put it on a candle stick holder
(found at Micheal's for $5 and used a 40% on it)
I do think it would be so cute to cover the ball completely
here are two other idea's I had where you could do that:
1. put several in a basket
2. put on a string and have them as a banner

Last year I posted about the heart shaped cinnamon rolls. I wanted to link it about again so my new followers could make them too. I will be making them again. They were seriously so cute that I almost didn't eat them. almost.

I made this frame over Christmas. Two of them actually. One for me and one for my friends as a Christmas gift. I really love it so I figured I would throw it in with my Valentines crafts. It is a pretty thing. Shanty 2 Chic has a tutorial for it.

Cupcakes. I know. I make a ton of sweets for Valentines
box of marble cake mix
chocolate fudge frosting
sprinkles
chocolate almond bark
wax paper

For the hearts on the cupcakes
melt the bark in the microwave
put it in a heavy duty zip lock bag
cut a a whole at the tip of the bag
make the hearts on wax paper

Wood. Paint. Distress. Hey Cupcake Vinyl.

Well, after seeing all the conversations hearts candy turned into decor..

I decided to put these projects together and make a "conversation heart tree". I seriously LOVE how it turned out.

Supplies:
Styrofoam Cone: Hobby Lobby
Candle stick bottom: Hobby Lobby
Finials: Hobby Lobby
Pink Ribbon
Large package of Conversation Hearts
Hot Glue

hot glue the candle stick bottom to the bottom of the Styrofoam tree
start at the bottom and hot glue the conversation hearts right unto the Styrofoam until you get to the top
there may be a small gap in between the top and where you push in the finial in the top but once you tie the ribbon around it won't show
I wrapped my ribbon around twice before I tied the bow
If you tie your bow backward it will lay perfectly

And now your done!
You have a cute Valentines Tree!

Wreath Love with a tutorial

Back in December I made this wreath and loved it...loved it so much that I made another for our Christmas party "Dirty Santa" Gift (instead of bringing an actually naughty gift because that's what we though a dirty Santa gift was initially) .. and then loved it a little more. So of course, I had to give it some love for the month of love.

And I love my followers so I wanted to share the love by sharing my rolled flower tutorial..

Take a piece of fabric about 2 inches
Fold it in half
Iron it
Tie a knot at the very end
That's the bud of your rosette flower

Roll and twist
Every time you turn your hands twist the fabric
hot glue it to help it hold as you go

When you want to stop twist your fabric down

Flip your flower over and hot glue the hannah out of it
Cover the hot glue with yoru excess fabric

Being a stay at home mom is amazing and the best job in the world is being "just a stay at home mom". Clint has been out of town all week. It is officially the dreaded "accounting busy season". I will now see my husband very little for the next 3 months. Now this post was actually not to complain about how lame it is when my hubs is gone all the time. I am actually extremely productive when he is out of town. I have a spotless house, work out everyday, and finish projects. So this week I organized the pantry. The baskets were only $1.50 at Walmart and I had extra vinyl from past projects. It is a new year. Go organize something ladies.

Don't these just look so yummy. Well sorry but you can't eat them. They are crayons! My supplies were just a 64 count of crayons and a small candy mold. I melted the crayons and poured them into the mold. It was that easy. I am putting this is Skyler's stocking. I want to find a car candy mold and do a crayon box full of them for him! Crafty. Easy. Cute. and Cheap.

Last week I went over to my friend Carmen's house for a girls night...a much needed girls night! I saw a tutorial for this adorable Tree and KNEW I had to make them! What better time to make them than a girls night? We had Pamela (Carmen's sister) and their mom join us too! Let me just tell you these trees turned out so dang cute. I just can't stop looking at mine. They do take awhile to make, though. It ended up being a "two night girls night". Overall, I think they were really fun and simple. I most admit I kinda miss you. Charlotte has a lot of trees and those trees hide everything, which is beautiful but not when your trying to find stores. In Utah the grid system makes sense and I am absolutely lost with out it. Literally. Without the mountains I have no clue which way is West or East. I have done more U-turns this past week than double what I had done before. I miss my Utah friends. I don't know anyone here yet. I'm a little lonely. I never considered Utah my home but now that I have left I am home sick. In time I know I will love Charlotte, get my bearings, and will get to know people around me. Until then I will be making lots of U-turn.

We will be painting our new main room a week from Saturday.

Yes, thats right people we are moving in 4 days! Making our long 3 day drive, 10 hours a day trip this Tuesday the 7th!!! I am getting so nervous. The adventures that will come are completely unknown.. and that's scary and exciting... mostly exciting with some scary mixed in.

Okay so maybe I already started the countdown like 3 months ago but we leave for Charlotte in 2 weeks!!!!! I am soooo excited!!!! Excited enough that I have already decorated our living room to be... well sort of. I have everything picked out! :D

Here is the layout to our apartment
We want to paint the wall in the living room that is on the side of the master bath green and the walls in the sun room teal. We want a sand color couch and a black coffee table.

Here is the pillows we will have on the couch. We already bought them! Our first living room purchase!
This is the exact color we want to paint the sun room too!

Here is the painting we are getting. We love that it has all the colors we want in the house and how it ties it into one piece. We are going to pull out the green in here to color the accent wall green. It will hang on the same wall as the kitchen.

Wednesday Clint took me to my first Jazz game! Sam watched Skyler so it was an official date with my man. It was so fun! We had such a blast. We were center court row 13... AMAZING SEATS! I wish the Jazz had won of course. Jazz 86 Suns 100. It wasn't a close game where you are hanging on to the edge of your seats but maybe next time. Here are the photos of the night. I am excited to scrapbook them.

The festival of Colors

Skyler seriously loved it!!!!

Skyler and Collin, my little brother. I was so excited he came to visit! Skyler wanted to do everything with him!

These are the yummy cupcakes I made. I put a cookie at the bottom of the cup cake liner and then filled in 3/4th the way through with chocolate fudge cake mix. For the frosting I added a drop of peppermint extract to the chocolate fudge icing. I used green molding chocolate to make the 4 leaf clovers. I saw it on a blog but can't remember which one to give you the link.

So we have been doing lots of stuff lately! My brother has been in town so we have played with him. We have gone to the park a ton because it is finally spring! We went to the festival of colors! At the festival Skyler had so much fun! There were a lot of people! We had to walk 2 miles to get there, so I got my exercise for the day!

This morning I forgot it was St. Patty's Day. Luckily I put on my green work out pants! Clint didn't and when I meet him for lunch... I just had to pinch him.

My friend and I went to the mall today. When we were about to leave, one store left to window shop at, Skyler proceeded to through a screaming temper tantrum. For 30 minutes. 30 minutes was the time it took me to get him from one side of the mall to the other and in the car during the screaming, kicking, flinging, trying to escaped out of the stroller, and grabbing the strollers wheel to stop me from moving. It was amazing. But I didn't loose my temper which I am proud of myself about.

Yesterday was beautiful. Today isn't as Sunny but the temperature is just as nice. We have had are windows open for two days. I am dying for Spring to stay and then Summer to come.

Clint, Skyler, and I meet my Mom and Sister for lunch yesterday. My little brother was there too and came up and surprised me. I haven't seen him since November. He lives with my Dad and Step Mom in Texas. It was amazing to see him and a great surprise. Skyler adores Collin. He was following Collin around everywhere he went. Then that night Clint and I were making chocolate chip cookies together and Clint's Brother Chad and his wife Kelly knocked on our door and surprised us. They live in Cedar City and were coming through to go to Kelly's brother's wedding today. Yesterday was the day for surprises.

That's all the rambling I have for today. When I upload pictures off my camera I will show y'all the chocolate thin mint cookie cupcakes I made for Saint Patrick's Day. They were to die for.

How did I get so lucky?

This Valentines Day really was the best. How can I not feel love on the Day of LOVE when those are my boys! I love my little family!

These are the flowers I came home to on Saturday. Beautiful. My hubs knows me!

Sunday Morning I decided to make heart shaped cinnamon rolls. I used this recipe and got the heart shaped idea from this blog. Let me just say that I think they turned out so dang cute and they were sooooo yummy. Dangerously yummy. I think this will be a Valentines morning tradition in our house.

Then we decided to have a little Valentines fun and take a photo shoot.

Chick-Fil-A Chicken Salad

2/3 cup mayonnaise
1/3 cup very finely diced celery (left out because we didn't have any on hand)
1/4 cup sweet pickle relish
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon ground pepper
2 1/2 cups of chopped Chick-Fil-A chicken nuggets

Today I went to Chick-Fil-A for lunch. I receive text messages from them every so often with coupons or discounts.Today they were doing a food drive and if you brought in a can of food you got a free 8 count of chicken nuggets. Well I went at noon and was sent away because the food drive didn't start until 4pm (Of course I got lunch there anyway). I picked Clint up from school at 5:30 with 3 cans this time stored in my purse. One for Skyler, one for Clint, and one for Me! We received a total of 24 abosultely free nuggets! What a deal! I had already planned my dinner. Pork Chops with mashed potatoes and roasted cauliflower. Off the subject for a second, the roasted cauliflower was amazing! My non-vegetable eating Husband loved it! Anyway, we were planning on just warming the nuggets up and eating them for lunch tomorrow. Then I had an amazing idea. Googled Chick-Fil-A chicken salad and found a recipe. So I shouldn't be looking for housing. It is a very bad thing to do. I am going to fall in love with a place and guess what... there is nothing I can do about it because all of these places are looking to fill with tenants immediately. Lasagna Soup

This is one of my favorite soups to make. You'll have leftovers for days and it's full of yummy healthy ingredients!

(you can half or quarter as you like)

1/2 lb. italian sausage

1/2 lb. ground beef

1.5 tsp of salt (or not, since everything else is so salty

1.5 c. chopped onion (I usually omit this and it's fine...but if you like onions...)

1.5 c. carrots

6 cloves minced garlic (that is sooo much. I either do a clove or two or sprinkle some power on there)

brown sausage/beef with salt. add carrots and onions. saute for 3 minutes. add garlic, saute for 3 more. set aside.

7 tsp chicken soup base (I use a cube of two of boullion)

7 c. water

3 c. of canned diced tomatoes (a can or two, depending how much you like tomatoes)

1.5 c. marinara sauce

1/2 tsp oregano, tyme, basil, parsley

combine all in soup pot. add first section, boil until carrots are tender.

still boiling, add egg noodle pasta (original recipe calls for .24 lb...or 3.84 oz. Unless you cook like that, I just add noodles until I feel like there is enough). simmer for 10 minutes.

enjoy with parmesan and/or mazarella cheese.

Cookie Dough Truffles

Adapted from "Taste of Home"

Ingredients:

1/2 cup butter, softened
3/4 cup packed brown sugar
2 cups all-purpose flour (*You may need more flour than this. I added about 1/4 cup more because the dough was a little too sticky.)
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
1/2 cup miniature semisweet chocolate chips (*I used normal size chocolate chips)
(Optional) 1/2 cup chopped walnuts
1 1/2 pounds semisweet chocolate candy coating, chopped or dipping chocolate

Directions:

In a mixing bowl, cream the butter and brown sugar until light and fluffy. Add the flour, milk and vanilla; mix well. Stir in the chocolate chips and walnuts. Shape into 1-in. balls; place on waxed paper-lined baking sheets. Loosely cover and refriderate for 1-2 hours or until firm. (*I put them in the freezer for about 40 minutes and that worked well, too.)

In a mixrowave-safe bowl, melt candy coating, stirring often until smooth. Dip balls in coating; place on waxed paper-lined baing sheets. Refrigerate until firm, about 15 minutes. If desired, remelt remaining candy coating and drizzle over candies. Store in the refrigerator.

amazing cinnamon rolls

1st sorry I haven't been keeping up with posting meals everyday. It is hard to take a picture, upload the pictures, and post that evening. So I just decided I will still try and post everyday and if I can add pictures I will but I won't not post because I didn't have time to upload a picture of the food. Sound good?
Okay so yesterday I made pulled pork sandwiches. We didn't have buns so I made these homemade rolls. I made a couple changes to the pork- No coleslaw (because we don't like it) and I just used regular paprika ( I didn't have smoked). The recipe made a TON of rolls. So I cut it in half and... made cinnamon rolls which were to go to not post!

Overnight Cinnamon Rolls

Dough
1 T active dry yeast
1/2 C warm water (105 degr F/ 40 deg C)
4 1/2 C all-purpose flour (22 1/2 oz 700g)
4 large eggs
1/4 C sugar
1/2 C (1 stick) real butter at room temp

Filling
1/2 C (1 stick) real butter at room temp
3/4 C packed brown sugar
1 T cinnamon

Glaze (the recipe for frosting that I used is below)
1 C powdered sugar
2 T butter, melted
2 T milk or cream
1 t vanilla extract

In the bowl of a stand mixer, sprinkle the yeast over the water, allow to bloom for a few minutes, then whisk until smooth. Whisk in 1/2 C of the flour. Cover with plastic wrap and let stand in a warm spot for about 30 minutes.

Add the eggs, sugar, butter, and remaining 4 cups flour to the yeast mixture. Fit the mixer with the dough hook and knead on medium speed until smooth 10-12 minutes. Add a bit more flour to reduce stickiness if needed.

Cover with plastic wrap, set in a warm spot and let rise until doubled, about 2 hours.

While dough is rising, prepare filling. Take 2 T of the stick of butter and set aside. Beat remaining butter, brown sugar, and cinnamon together until combined and slightly fluffy, about 1 minute.

Butter a 9x13 baking dish. Transfer the dough to a floured work surface. Roll out into a rectangle about 15x10 in. Spread filling onto dough and roll up length-wise.

Use string or dental floss to score and cut the dough into rolls. You can make 12 small rolls, 10 medium ones, or 8 large. Place cut side up in baking dish. Melt the reserved 2 T butter and brush on top of rolls. Cover tightly with plastic wrap and place in the fridge overnight.

The next morning remove from refrigerator and let rise until half again as high, about 1 hour. While rising mix glaze ingredients until combined. Preheat the oven to 350. Bake until golden brown, about 30 minutes. Let cool in the pan for 15 minutes. Spread the glaze over warm rolls and serve.

I love cream cheese frosting so instead of using this recipes frosting I used this cream cheese frosting

4 ounces cream cheese, softened
1/4 cup butter, softened
1 1/2 cups powdered sugar
1 1/2 teaspoons milk
1/2 teaspoon vanilla

I love love this meal!

Baked Creamy Chicken Taquitos

1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic
3 T chopped cilantro
2 T sliced green onions

2 C shredded cooked chicken
1 C grated pepperjack cheese

small corn tortillas
kosher salt
cooking spray

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.

Heat cream cheese in the microwave for about 20-30 seconds so it's soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.

You can prepare up to this step ahead of time. Just keep the mixture in the fridge.

Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or come unrolled right away, just try heating them longer and try the paper towel thing.

Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.

Then roll it up as tight as you can.

Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray or an oil mister and sprinkle some kosher salt on top.

Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.

Creamy Lime-Cilantro Dressing

1 pack (1oz) Hidden Valley Ranch Dressing Mix (regular or buttermilk, and ignore directions on the packet)
1C mayo
1/2 C milk (or buttermilk depending on which packet you buy)
1 lime
2 cloves garlic, roughly chopped
1/2 C roughly chopped cilantro
1/4 C green salsa*
hot sauce

Place milk, mayo, and ranch mix in a blender. Juice the lime in there too, you should get about 2T juice. Toss in the garlic, cilantro and green salsa. Blend 'er up. Sample it and add hot sauce to taste. Make it several hours ahead of time to allow it to thicken.

Framed Temple Picture

Hey girls! I really want to do a party where we make this picture or your preferred temple. All the temples the lady brings are also listed below. I think these pictures are so beautiful and I think that most of y'all would enjoy making them because the price is so amazing. Price details below. The lady will come out and teach us as long as we get 10 pictures. So if you are wanting to do more than one let me know that too! You have to pay two weeks in advance so the middle of November. I wanted to know what times also worked for everyone and then we would figure out a day and time that works best for everyone during the first week in December!

P.S. My wonderful husband, Clint, has offered to babysit so if you have kids you have a babysitter!

Dreaming of making messes

Was does my 18 month old love making messes?

I know I haven't blogged in forever and the reason being is the above question. He is a little destroyer. You have to have you eyes on his stinkin' cute self or example: he will remove all of the dvd from the entertainment center and all my stamps, while I am cleaning that up he will run into my bedroom empty out my side table, throw shoes everywhere, if I leave the bathroom open he goes swimming in the toilet, and if I don't watch him when he is in the kitchen he get into the trash. Yes I am aware every 18 month old does this BUT my little man dreams about making messes. So I will update my blog soon when ya know, my child decides to start playing with his toys!

Meatball mixture

Tonights menu is
Spaghetti & homemade Italian meatballs

Meatballs-

Ingredients
1 pound ground beef
1/2 pound sausage
1 cup of Italian bread crumbs
tbs parsley
tbs Italian seasoning
1 egg
tbs garlic pepper
2 spoon fulls minced onions (if you put fresh onions the meatballs don't hold there form as well)
2 garlic cloves
squeezed fresh lemon halve (optional)
1/3 cup grated parmesan cheese

Directions
Be prepared to get dirty. Combine all ingredients together and mix it all together with your hands. Form meatballs with your hands. But each meatball on a cooling rack that is on a cookie sheet (I do this to let all the fat drain off the meatballs). Cook at 350 for about 45 minutes.

Spaghetti Sauce-

Ingredients
1 jar spaghetti sauce (Walmart brand is my favorite)
1/2 cup onions
2 garlic cloves

Directions
Chop up the garlic and onions. Put in a pot with spaghetti sauce. Turn on medium low heat and let it simmer for a couple hours. Stir occasionally. You DON'T want your sauce to burn. It is 4:30 right now and we are eating at 7, so this is how long I am letting my sauce simmer.

Ingredients
One package frozen spinach thawed
One can Alfredo sauce
2 garlic cloves
1/4 cup onions chopped
tbs of butter
fresh squeezed lemon half
dash of pepper and salt
Milk if needed
Bowtie noodles

Directions
Put tbs of butter in sauce pan and add the onions, lemon, & garlic. Once lightly brown add Spinach & Alfredo. Dash with Salt in pepper. Let simmer while you cook the noodles (12-14 minutes). If sauce becomes too thick you can add a little milk. If you want more of an Italian flavor you can add Italian seasoning and parsley.
Poor sauce on top of noodles and serve.

The yummiest Banana Bread

Banana Bread Recipe

Ingredients
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

Directions
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

-I doubled the recipe. On the smaller/taller loaf I sprinkled chocolate chips on top which. It is just a yummy and simple recipe. I loved it. I never but butter on my slices because the banana bread has such great flavor on its on it doesn't need anything else.

Salsa Chicken

Ingredients
4 Chicken breast
1 1/2 cups salsa
spoon full orange marmalade
1 1/2 tsp All spice seasoning
1 tbs brown sugar
olive oil
tsp lime juice (optional)
can corn
can beans

Brown rice

Directions
Start by cooking the rice let rice sit for 30 minutes in water until you start the slow cooker. Takes about 1 hour. I am sure you could cook the rice without a slow cooker but its a lot easier to use one so thats how we did it.

Cook chicken in tablespoon of olive oil.
Once cooked add all ingredients and let simmer until rice is done. It simmered for a good half an hour. I don't like black beans so we cooked those separately and added them on-top of the dish. You can do that with both of the black beans and corn.

Serve over rice

-I wish I could take credit for this meal but I can't Sam came over and made it for Clint and I. It was so delicious. I will defiantly be making it. Next time I am going to try using mango salsa and swap the orange marmalade for peach jam.

Ingredients
1/2 cup butter
4 cloves garlic, minced
3/4 cup dry bread crumbs
1/2 cup freshly grated Parmesan cheese
1 1/2 cups shredded Cheddar cheese
1/4 teaspoon dried parsley
1/4 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/8 teaspoon salt
8 skinless, boneless chicken breast halves - pounded thin

Directions
Preheat oven to 350 degrees F (175 degrees C).Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 5 minutes.In a shallow bowl, mix the bread crumbs, Parmesan cheese, Cheddar cheese, parsley, oregano, pepper, and salt.Dip each chicken breast in the garlic butter to coat, then press into the bread crumb mixture. Arrange the coated chicken breasts in a 9x13 inch baking dish. Drizzle with any remaining butter and top with any remaining bread crumb mixture.Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

-I only defrosted 3 chicken breast but cut them all in half (diagonally) which gave me 6 pieces. I have never made this recipe. It just looked yummy and we were in the mood for chicken tonight. If anyone has a really good chicken recipe they should comment and give it to me. For the side I am just using mashed potatoes I had left over from making the Grilled Pork Chops. I made WAY to much potatoes

It was really yummy. The chicken was so tender. Next time I think I will combine my normal breaded chicken recipe with this recipe. I know the pictures don't look very fancy we had 5 people eating so we just used paper plates.

Place tomatoes on a foil-lined baking sheet and drizzle with olive oil (3-4 T should do it) toss with your fingers making sure everything is coated and then lightly sprinkle with kosher salt and pepper. Cook in the pre-heated oven for 12-15 minutes. You can tell the tomatoes are ready when the skins start to split. Don't overcook them or they'll be mush!

Cook bowtie noodles

While the tomatoes and pasta are cooking-
Simmer in a large frying pan pesto, garlic, milk, butter, parsley and parmesan (about 2 spoon fulls).

Next add the can of Alfredo and shrimp to the pesto sauce in the frying pan let simmer for about 5 minutes.

When Tomatoes are done add them to the sauce. Poor finished sauce over bowtie. Dash with salt and pepper and grate fresh parmesan over the top.

Grilled Pork and mashed potatoes

Meat
I only used about 2 porks yesterday for the tacos and the package had about 6 pork chops. Since I already defrosted it I am going to go ahead and grill some chops tonight.

6 Tbsp table salt
6 tbsp sugar
Your favorite dry rub (I highly recommend Cavender’s Salt Free All-Purpose Greek Seasoning)
4 Bone-in rib or center-cut pork chops

Dissolve the salt and sugar in 3 quarts cold water. Seal the chops and brine in 1-gallon ziplock bags, pressing out as much air as possible. Refrigerate, turning the bags once, for an hour. Remove the chops from the brine and pat dry with paper towels. Coat the chops liberally with the dry rub.

Build a hot, 2-level fire. Grill the chops, uncovered, over the hottest part of the fire until browned on each side, 2 ½ to 3 minutes per side. And cover with heavy duty aluminum foil of a disposable aluminum roasting pan. Continue grilling, turning once, until desired doneness. (Don’t let the thermometer touch the bone.)

-Now the recipe I have that is how the grill the chops but I am defiantly not a hight tech griller so I just put them on a hot grill and fill them after about ten minutes. Cook twenty minutes totally.

Remove the chops to a cutting board and let them rest for 5 minutes. Serve immediately.

Potatoes

Russet potatoes
cream cheese
stick of butter
milk
dollop of sour cream
dash of salt

-Depending on how much potatoes I do a half to a full the of cream cheese
Add the milk is just until the potatoes become a mashed potatoes consistency.
Butter is a stick to a half of stick.

Boil potatoes cut and peeled potatoes until you can stick a fork through easily and the potatoes starts to fall apart. Drain. Transfer to a big bowl. Add cream cheese. and butter I cut it into pieces and mix it in. Then I blend them with a mixer. Add milk. Blend again. add a dollop of sour cream mix in. add dash of salt.

I am going to start trying to blog each day and tell everyone what I am cooking for dinner.
So here it goes... hopefully I can keep up with it cause I think it would be fun. I would love everyones comments... especially if you have made it before with a different recipes.

Tonights the menu is
Pork Tacos with homemade tortillas and salsa

Meat
First I will chop the pork in bite size pieces. I am marinating the pork in marsala cooking wine and chopped fresh garlic with a dash of lemon pepper. Marinating for about 1 hour. I am cooking it just on a frying pan. Do not remove the pork until all the marsala has evaporated if pork is full cooked before the marsala has had a chance to evaporate turn down the heat and let it simmer.

Yes I am making them homemade and yes you can do it to. This recipe is surprisingly easy and they turn out amazing!

Salsa
finely chop all the below ingredients then mix together
6-8 tomatoes
half lemon
half lime
two cloves of garlic
medium onion
dash of sugar
salt and pepper
handful of cilantro
half a jalapeno

Put it all together
Start with the tortilla add sour cream then pork top with cheese, salsa and a little lettuce!

Two years and the theme is TWO! Clint gave me 4 presents. Every Present was two. A pair of boots, A pair of earrings that match my necklace, two subscriptions to scrapbook magazines: Scrapbooks etc and Creating Keepsakes, a reese penut butter bar that has two reese. He gave me little rittles and I had to guess what the present was.

Now for the day we went hiking in Spanish Fork to the hot springs. We went swiming (in are swimming suits!) and then came home showered and went to Caribba's for dinner. So yummy! It was such a wonderful day! I love you so much Clinton. Thank you for an amazing anniversary. I will start having to plan a year in advance to top off this celebration for next year.

Isn't is so amazing how in the same cave there were so many different types of rocks? The tour guide was from North Carolina and knew Carmen and Ryan which was so funny! There is one part in the cave were it is pitch black. Your eyes will never adjust and you will never be able to see anything. The tour guide turned off all the lights and had me stand by her because I was the only one with a diamond ring on. Then she pointed a little red key chain laser at my ring. It sparkled all over the room and it look stars on the ceiling! It made me feel like a million bucks wear the beautiful rind my husband gave me! Overall it was so much fun and we are so glad we went and did it!

As you can tell by the first two pictures Skyler fell dead asleep on the hike back down the mountain. It was so cute I was hiking behind and Skyler's head kept falling down and hitting Clint's head. Finally Clint took him down to see what he was doing that for and he was asleep. He stayed asleep until we got home.

Let me just say hiking Mount Timp is not a leisure hike! It is a pretty long hike! Then we went through the caves so in whole it probably took about 3 hours! It was well worth it though! We had a blast as a family and got to hike Timp before we move. One the checked off our list of things we want to do before we leave Utah! I took a ton of pictures so I am spliting it up in three post. 1st "The scenery" up by mount timpangoes before the hike. 2nd "The hike" up and down. 3rd "The caves".

Vaccinations

I am very grey when it comes to vaccinations. I can't say I have a strong opinion either way. Clint and I have currently chose to not vaccinate Skyler. There are a few reasons why we have decided not to vaccinate. One, I know we are benefit from most of the United States not being vaccinated. Two, If anybody knows me they know how unhealthy I am and know how healthy my husband is. That might or might not be from vaccinations. Three, vaccinations may have complications we don't realize yet... such as autism etc. Because it is just my therory I try to stay neutral on the situation and choose to do what my husband and I feel best for Skyler. What I don't like is someone calling me a moron for not vaccinating my child! That is never cool. Vaccinations definately prevent disease, I am not saying that. We just have no clue what the long term effects might be. People have no right to accuse those who choose not to vaccinate of not caring or being irresponsible.

During the summer thanksgiving point has a petting zoo and every Tuesday its only two dollars! Rachel and Adam invited us to go while they were watching there nephew, Lex. We are so glad they did it was so fun! We told Chelsey and Taylor about it so they could bring Chloe and Logan too! They had so many animals to look at and pet. Skyler loved it! It was a great date night. We were able to do the pony ride with Skyler and a carriage ride with everyone! If you haven't gone I would recommend going next summer!

To wrap up the weekend of camping: we had the most amazing memories, laughed tell we cried, had a huge sleep over with the five of us for two nights in the tent, woke up way to early, had no air mattress cause our air mattress broke, swam in freezing cold water, went out on the wave runner, cooked breakfast in the rain, made the best bacon ever by cooking it like soup, learned the Timpangoes fight song, learned that I make up random songs about everything, learned out how to pronounce KIA (the car brand), and last learned that I am a cabin camper! Real Salt Lake Soccer GAME!!! Soccer games are so fun to go to! For our new sister in law Kelly's Birthday Chad threw her a surprise party to the real salt lake game! Props for Chad who got most of Kelly's friends there! I am glad we were able to come too! We went on the 8th I think... I shoudl blog more frequently so I remember the exact days we do things. It was t he first weekend my love was home form N.C.! And OF COURSE REAL WON! It got really cold so pre warning anyone who goes to a soccer game in salt lake, even in the middle of the summer, bring a hoodie! We did get a picture of Skyler and I with the mascout, which is a tiger, but its a really awful picture so I didn't post it. Skyler hated the macout and was screaming because he was scared. It was kind of sad! Hopefully he wont be scared of the COUGAR!

pre warning- I am venting so if you don' t want to read my small pity party stop now

When Sunday rolled around I was two weeks late for my period. Now my period is never on time after chemo but usually not off more than a week. At that point Clint was stressing out. He was reading online all the side effects of being pregnant on Cellcept. It is really bad. I would most likely have a miscarriage it would be late into my pregnancy and if the baby was born and not a still birth it would probably have a deformity if not mental retard. So I took a pregnancy test to ease the stress for both of us and if I was to get the ball rolling to figure out what I would have to do. We don't even know if I could carry the baby right now. I would have to go off my medicine cause if I stayed on them it would make the baby sick and then me sick. Right now my health is very dependent on my medication. See the problem? Well I have prolonged it long enough... I am not pregnancy. The pregnancy test came back negative. Now why is my title titled "what is wrong with me" because what was my reaction after I found out I wasn't pregnant? I CRIED! I am not ready for a baby right now even if I could have one no problem. But I want a baby eventually. I wanted to get pregnant so that my kids were no more than 3 years apart. But I don't have the control over that. Either we adopt and that could take I don't know how long. Or two we try when I am healthy enough to go off my medication (which I am not close right now) But I will have to take blood thinner shoots everyday in my stomach or butt called lovenox which hurt like hell! If I get sick at all I will be put on a huge dose of predisone. Babies can have issues from moms on predisone, the percentage is not as bad as cellcept but its not much better. Then right after I have the baby I will have to get chemo. Yeah all of that sounds freakin' great. I am just frustrated right now. I know I am so blessed to be alive. I love being a mom to Skyler. He is so funny and adorable. I just hate not having control on when we can have a baby together. I hate not being ablet to even know when we can adopt or try. It is all so "up in the air". I am really for the long story. I am really not tryign to just complain. I just needed to let it all out.

the good, the great, and the freazing cold

Currently I know it is still dang hot outside.. But its crazy to think in a month it will start getting cold! I love fall. All the beautiful colors... and all the fun things that come are coming up!

September starts with Our Anniversary (2 years on 9-8-7), Scrapbooking Expo, BYU Football games, My Birthday- Vacation to Las Vegas, and Halloween! I am a Summer beach bum at heart but I love love fall too! By the end of a long hott summer I am ready for fall!

For our anniversary Clint is in charge of it this year (each year we take turns) The only thing he told me is it has a "theme"?... I am excited to just have time with him. I can't believe its only been two years. We have been through so much together. Clint is my best friend! I can't imagine life with out him by my side anymore. I love making dinner for him every night. Supporting him each day. Having dreams and goals with him. I am so excited for the next year of our life together. But hopefully it will be less eventfully! Sometimes I honestly don't understand what I did to be so blessed to have such an amazing man by my side! I love you Clinton!

I turn 21!! I know I know I am still a baby! lol! But it does mean that I can go to Vegas and be able to get into places! We are hopefully going to go with some friends but either way its going to be a blast. I am really excited. I want comments on fun things to do while we go and the best places to eat though...

For Halloween I like for Clint, Sky, and me to all dress up as the same "theme" I guess is the best way to put it. Last year... for those of you who don't remember I was a Cowgirl, Clint was a farmer, and Sky was a pea in the pod! Cute huh?!

So this year we are going to be animals.. I am going to be a kitty cat, Sky is going to be a monkey, and Clint is going to be a Cougar! (If I can find a way to dress Clint up as a cougar... without paying 500- 200 dollars for a mascot costume)

Now what I am NOT excited for... after fall ends what happens? come on y'all know this. WINTER COMES! Nasty, wet, cold, snowy, winter comes! Utah winter! That starts anywhere from October to November and last until around march!

I love the first snow because its always so pretty and I love Christmas time. This year Sky will be old enough to play in it and we can take him sledding. That will be great but the 3-5 months of freezing stinkin' weather is NOT worth it! Well atleast it is only one more year.. I will have one last white Christmas and then The South here we come!

Since Clint got the job offer for PWC I have been looking for townhouse in the Charlotte area. For when we move next August. I have also been figuring out how I want to decorate each room in the house because I FINALLY get to PAINT my walls!!! No more white!!! I am plannning to go for a completely new look for the master suite and new some advice. I am thinking about doing the master black and cream an accent wall of a light charcoal grey shade and then maybe if it needs some color a teal or something? I need some help... as you can tell! I have recently become obsessed with black and cream. I think its so elegant and pretty! This is the bedding I fould that I love... start the comments and advice flowing!!!!

Pioneer Day Celebration

For Pioneer Day or July 2th in Utah it is a Holiday. Celebrated as much or more than 4th of July. Which I think is hilarious! Clint is still gone on his internship to North Carolina which was sad I wish he could have had fun with us! Cassidy (Clint's little sister) came to stay with Sky and I for a week. On the 24th we went to a parade in the morning with Sam and for the afternoon and evening we headed over to my friend Chelsey's house and had a yummy dinner and did fireworks. It was a lot of fun! Well here is my update! I am sorry it has been so long!
Lets start with #2: We bought our First car! It's a Mazda Tribute!!! We are so excited, First cause we have a second car and second cause it's a big expense and milestone that we did together!
#3. We had Skyler's Birthday at my moms clubhouse in Saratoga Springs, It was really stressful getting everything ready! I think one because of communication between my mom and us. But we had it (changed the time two days before) but still we had it and it went great and was a lot of fun! I can't believe Skyler is ONE!
#6. I had a surprise party for Clint on Friday! I think he knew because he didn't act very surprise but he denies it! It was a lot of fun! Carmen, Ryan, Jamie, Squire, and Taylor all came to celebrate with us! Thanks so much for coming y'all!!!
#4. YES, I still haven't got my license we even already bought a second car. In Utah you have to go to drivers ed and its like $300! But I take my final driving test today then have my final behind the wheel tomorrow. As long as I pass my test today I will be a license driver on WEDNESDAY MORNING!!! WHOO HOO!
#5. For mothers day Clint made me chicken Marsala & garlic mashed potatoes! It was so yummy!!! What a sweet husband! My mom and my sisters came over to eat with us! Thanks babe for making treating me like your princess for mothers day!
#7. We hiked the Y for the first time! It was so fun! We left at about 7pm so we were able to look over provo for about 20 minutes then we were able to see the sunset. We sat up at the Y for about 15 minutes until the sun set almost all the way. Then we hiked back down. It takes about 1 hour to hike up and 30 minutes to hike down!

Skyler is getting so big! He is 10 1/2 months old. We are enjoying family time more and more. One of our favorite activities to do as a family is taking Skyler to the park. Our favorite park is right next to the Provo river. We love going on long walks after playing with Sky on the playground next to the river. Skyler loves looking at the water. It is a nice exercise and a great time for Clint and I to talk. Sunday we went for a 2 hour walk. With my camera I was able to capture priceless moments playing with Skyler at the park. I am really growing a passion for photography. Here are some of my shoots.

Utah County Food Co-op!

Growing up my family always loved to make fresh homemade salsa. Now that we are grown up and have our own families we have realized how expensive it can be. To make a large bowl it cost about $20.00.

So when your tight on money buying the produce to make homemade salsa isn't the first thing on your grocery list.

My sister Torrie lives in Texas and has recently joined a Farmers Market co-op. She called me bragging about how much produce she got for the price and how yummy it all was.

Fruits and Vegetables in general are so expensive to buy at the store. I love them and I could eat meat like once a week and just fruits and vegetables the rest of the time.

So my mission is to find a great food co-op in the Utah County area! Can anyone help?

On Valentines day this year I could not help but feel so blessed. I have the most amazing two boys in my life that mean the world to be. I know they love me and I love them! Words could not explain how amazing it is to wake up every morning next to the one you love. Then walk into your baby's room to get him out of bed and have him give you the biggest smile. On Valentines I woke up and made Clint and Skyler biscuits & gravy with Eggs and bacon. I decorated the table with some hearts from my new stampin' up punch. Then I went to get Skyler out of bed. I turned a love playlist and it slowly woke Clint up. We all had breakfast together. Then I went to dress Skyler before we took him to Grandma's for the day. Skyler then decided to have his first full fledged temper tanrum! I had my camera right next to me so I took some pictures with his alligator tears. Clint and I took Skyler to Grandma's and then went and had couples massages. They were so nice and relaxing. We went home and got ready drove to Cheesecake factory and put are names in went and watched a movie. The wait was 3 hours so we had enough time to go to the movies and then come back and we sat right down. It worked out perfect but it was a little stressful because the wait was so long everywhere! Clint didn't want to wait a long time but we had dressed up so nice that I wanted to go to a nice resturant. Luckly it really did end up perfect.

I love you Clint and Skyler!!! Clint is the most patient person I know. I think I love that most about him. Skyler bring joy to everyone he is around and what a blessing that is! Here are some pictures from Valentines!

We had a pretty warm day this week and live really close to a park. Kaley decided to take advantage of it and take Skyler on a walk to the park and of course do a little photo shoot. How can you resist when he is just so dang cute!

First Swimming experience

Skyler was adorable when we took him swimming for the first 30 minutes he was scared out of him mind. He just held on to my bathing suit. He didn't cry but was just really careful. Kinda reminds me of his dad! Sky eventually loosened up and loved it! He was still very past due for his nap but that made for a very cuddly boy so of course I didn't totally mind that! :-) We went with Chelsey and her family to the Lehi Recreational Pool!

The next two pictures gross me out! haha! I took the pictures as fast as I could before he put the trash in his mouth!!! This is the defination of a trouble maker!!!

Now I may be wrong but I don't think that is the way you are supposed to be on those things... that is when we realized Sky was too big for them! His face is priceless... "what mom, I am just having a little fun"

Skyler is defiantly trouble now... he crawls everywhere, eats everything, climbs on everything, tears apart anything, and gets into everything! He has such a personality now! We love every second of it but beware don't take your eyes off of him for second!
